Another new job opening at NutritionFacts.org

Spanish Language Site We launched our Spanish language NutritionFacts.org and social media pages almost one year ago, and since then we have reached tens of thousands more people around the world. Now people can simply go to  NutritionFacts.org/es  and find our videos, transcripts, doctor’s notes, and other pages all en español.  Video Caption Translations But that’s not the only way to see NutritionFacts.org in other languages. Over 80 volunteers spend time translating video captions into more than 16 languages. Resveratrol Supplements Are Finally Put to the Test

“If one searches the Internet for anti-aging interventions, a vast array of techniques are offered, from starvation regimes to dietary supplements and growth hormones. All are for sale, but none so far have been proven as the magic bullet, despite exorbitant claims on many of the websites.” Resveratrol is one supplement you’ll likely come across, a component of red wine that gained notoriety as a possible explanation for the so-called French Paradox, which turned out to be not so paradoxical after all (see  What Explains the French Paradox? ). As I discuss in my video Resveratrol Impairs Exercise Benefits , it turns out that “[c]ountries with high wine consumption are those in which saturated fat consumption used to be low but increased in recent years.” So, the low mortality from ischemic heart disease may just reflect the earlier, lower levels of saturated fat consumption, and the wine may just be a confounding factor. What About the French Paradox?

The so-called French Paradox is a term coined back in the 1980s by three Frenchmen to explain a curious finding: If you chart death from heart attack versus the amount of saturated fat and cholesterol countries consume, there appears to be a straight line. The more animal foods populations eat, the higher their death rates appear to be. Conversely, maybe if we got meat, egg, and dairy intake low enough, we could bring coronary death rates down towards zero. As I discuss in my video What Explains the French Paradox? , two countries didn’t fall in line with that straight line. Finland seemed to be doing worse than expected, and France appeared to be doing better than expected. Hence, the paradox. How could France have saturated fat and cholesterol intake similar to Finland, but five times fewer fatal heart attacks? Everyone had their pet theories to explain the paradox. Was it the wining? Being fit (and fairly muscular), I’m used to the stares and the strange and uninvited comments. I get it. I’m kind of a freak when it comes to being a girl. Most of the time I just smile and say something polite. But catch me on a rough day, I may be more likely to roll my eyes and say something very smart-ass back. It’s not that I want to be antisocial. But come on, hearing the same things over and over gets old. So, what should you not say to a fit chick? Here are a few of my favorites: “Do you lift?” What I want to respond is: “Nope. One question I get a lot is, “Why do you always add gelatin to your stocks?” I decided to do a post on this because the answer is actually more complicated than you might think. It’s complicated because there are so many good reasons — both from a health and a culinary point of view — to make this magic ingredient a pantry staple. What IS Gelatin? First, let’s talk about what it is: Gelatin is what collagen turns into after extended periods of low and slow heating. It’s a protein loaded with many amino acids that are normally only found in the parts of animals we don’t eat (think bones and tough connective tissue). Traditionally, those less edible parts would go into a stock pot with water and vegetables and simmer for six to 12 hours, until all of their healthy goodness is extracted.
